Mullet with Ginger

Ingredients:

- 1 whole mullet, cleaned and scaled
- 2 scallions, chopped
- 1 teaspoon grated fresh ginger
- 1/2 cup garlic wine vinegar
- 1/2 cup light soy sauce
- 3 teaspoons superfine sugar
- dash of chili sauce
- 1/2 cup fish stock
- 1 green bell pepper, seeded and thinly sliced
- 1 large tomato, skinned, seeded, and cut into thin strips
- salt and pepper
- sliced tomato, to garnish

How to do it:

1. Rinse the fish inside and out and pat dry with paper towels.

2. Make 3 diagonal slits in the flesh on each side of the fish. Season the fish with salt and pepper inside and out, according to taste.

3. Place the fish on a heatproof plate and scatter the chopped scallions and grated ginger over the top. Cover and steam for 10 minutes, or until the fish is cooked through.

4. Meanwhile, place the garlic wine vinegar, light soy sauce, superfine sugar, chili sauce, fish stock, bell pepper, and tomato in a saucepan and bring to a boil, stirring occasionally.

5. Cook the sauce over a high heat until the sauce has slightly reduced and thickened.

6. Remove the fish from the steamer and transfer to a warm serving dish. Pour the sauce over the fish, garnish with tomato slices and serve immediately.
