Ingredients:
- 1/2 large bunch dried thyme
- 5 fresh rosemary branches, 6-8 inch long
- 8 bay leaves
- 2 pounds salmon fillet
- 1 bulb fennel, cut into 8 pieces
- 2 tablespoons olive oil
1. Make a base on a hot broiler with the dried thyme , rosemary branches, and bay leaves, overlapping them so that they cover a slightly bigger area than the salmon.
2. Carefully place the salmon on top of the herbs.
3. Arrange the fennel around the edge of the fish.
4. Combine the lemon juice and oil and brush the salmon with it.
5. Cook for about 20-30 minutes, basting frequently with the lemon juice mixture.
6. Remove the salmon from the barbecue, cut it into slices, and serve with the fennel.
