Ingredients:
- 1 pound 2 ounces skinless, boneless chicken breasts
- 3 tablespoons tomato paste
- 2 tablespoons clear honey
- 2 tablespoons Worcestershire sauce
- 1 tablespoon chopped fresh rosemary
- 9 ounces cherry tomatoes
- sprigs of rosemary, to garnish
- couscous or rice, to serve
1. Cut the chicken into 1 inch chunks and place in a bowl.
2. Mix together the tomato paste, honey, Worcestershire sauce, and rosemary. Add the chicken, stirring to coat evenly.
3. Alternating the chicken pieces and cherry tomatoes, thread them onto eight wooden skewers.
4. Spoon over any remaining glaze. Cook under a preheated hot broiler for 8-10 minutes, turning occasionally, until the chicken is thoroughly cooked.
5. Serve on a bed of couscous or rice and garnish with springs of rosemary.
