This is a cassoulet with a twist-it is made with chicken instead of duck and lamb. If you can use canned beans, the result will be just as tasty. .

Ingredients:
- 4 tablespoons sunflower oil
- 2 pounds chicken meat, chopped
- 3 cups mushrooms, sliced
- 16 shallots
- 6 garlic cloves, crushed
- 1 tablespoon all-purpose flour
- 1 cup white wine
- 1 cup chicken stock
- 1 bouquet garni (1 bay leaf, sprig thyme, celery, parsley, & sage tied with string)
- 14-ounce can borlotti beans
- salt and pepper
1. Heat the sunflower oil in an ovenproof casserole and fry the chicken until browned all over. Remove from the casserole with a slotted spoon.
2. Add the mushrooms, shallots, and garlic to the oil in the casserole and cook for 4 minutes.
3. Return the chicken to the casserole and sprinkle with the flour, then cook for a further 2 minutes.
4. Add the wine and stock, stir until boiled, then add the bouquet garni. Season well with salt and pepper.
5. Stir in the borlotti beans.
6. Cover and place in the center of a preheated oven, 300 degrees Fahrenheit, for 2 hours
7. Remove the bouquet garni and serve piping hot.
